Fresh Berry Pie

Boil until clear:

  • 1 c. sugar
  • 1 c. boiling water
  • 3 T. cornstarch
  • 3 T. Jello (a flavor that matches fruit)

Let cool.

Mix in:

  • 1 1/2 pints of sliced strawberries, blueberries, raspberries, peaches—use your imagination.

Poor into cooled pie shell.


Jello Ideas

Since Jello is nice for a treat and dessert for hot days, here are some things we do for a variety—

For Orange Jello, add:

  • shredded carrots and canned pineapple (do not use fresh pineapple—it will not jell!)

For Raspberry Jello, add:

  • fresh raspberries or peaches

For Strawberry Jello, add:

  • fresh strawberries, blueberries, bananas, and/or peaches

For Blueberry Jello, add:

  • fresh strawberries, blueberries, and/or raspberries

For Lime Jello, add:

  • pears

Mix and match, have fun making them, and enjoy eating them!

Apple Salad

  • 8 med. apples
  • 4 med. sticks of celery
  • 4 med. bananas
  • 1/2 c. chopped nuts
  • 1 c. whipping cream, sweetened

Peel and dice apples, cut celery, and slice bananas. Mix well and fold in whipped cream. Serve at once. You can add or take away any of the fruits. Our family likes to add grapes. Also, some people (myself included), like it better without the whipped cream.

Freezing corn

A few years ago, when we were in a hurry to get ready for a trip and the corn needed to be frozen, Mommy had inspriation, instead of husking, and blanching the ears, she just put them bags—right from the garden. No husking or blanching. We were able to get 100 ears done in a half an hour! And the corn tastes a lot fresher when frozen that way.
