Sweet Potato Bread
Sift:
- 2 c. flour, sifted
- 3/4 c. sugar
- 1 t. baking powder
- 1 t. salt
- 1 t. cinnamon
Add:
- 1/2 c. chopped nut
Blend together in mixer, adding flour mixture gradually:
- 2 eggs
- 1 c. cooked, mashed sweet potatoes
- 1/4 t. butter flavoring
- 1/4 t. black walnut flavoring
- 1 t. vanilla flavoring
- 1/2 c. milk
- 3 T. oil
Bake in greased loaf pans at 350* F. until tester comes clean. Approx. 1 hr. for big loaf pan. 40-45 min. for small loaves.

Banana Nut Bread
Sift together:
- 1 3/4 c. flour
- 1 t. baking powder
- 1/2 t. salt
- 1/2 t. soda
Cream together:
- 1/3 c. shortening
- 1/2 c. sugar
Add to creamed ingredients, beating well:
- 2 eggs
Add sifted ingredients to creamed mixture, alternately with:
- 1 c. mashed bananas (2-3 large, fully ripe)
Blend well after each addition.
Stir in:
- 1/2 cup chopped nuts
Pour into well-greased loaf pan. Bake about 45 minutes to 1 hour. Top crust is lightly browned. Let cool in pan about 10 minutes. Take out of pan and place on rack to cool completely. To store wrap in wax paper or airtight container in refrigerator.

Carrot Spice Muffins
Mix:
- 1-1/2 c. flour
- 1 t. baking soda
- 1 t. baking powder
- 1/2 t. each of salt, cinnamon, and ginger
- 1/4 t. nutmeg
Mix, and then add to dry ingredients:
- 1/4 c. each of honey, and melted butter
- 1 egg
- 1/2 c. liquid
- 1/2 t. vanilla
- 1/2 c. raisins
- 1/2 c. nuts
- 1-1/2 c. grated carrot
If using a gluten flour stir only until moist. Do not beat very well before adding the baking powder. Add liquid if necessary. Place in greased muffin tins. Bake 15 minutes.
